Introduction:
Hesperidinase is the key enzyme for hydrolyzing hesperidin and has high application value. Hesperetin monoglycoside, hesperetin, rhamnose and glucose can be obtained by hydrolyzing hesperidin with hesperidinase. In addition, adding hesperidinase to canned orange slices to hydrolyze hesperidin can prevent white precipitate from canned citrus.
Nature:
The appearance of hesperidinase is white to dark brown powder or liquid, soluble in water, insoluble in ethanol, and hygroscopic.
